Budae jjigae "army stew" is a type of jjigae (a thick Korean soup similar to a Western stew).

Soon after the Korean War, food was scarce in Seoul,

 South Korea. Some people made use of surplus foods from U.S.

 military bases around the Uijeongbu area,

Pyeongtaek area (also called Songtan)or Munsan area,

 

such as hot dogs, Spam, or ham,

and incorporated them into a traditional spicy soup flavored with

 

gochujang (red chili paste) and kimchi.Budae jjigae is still popular in South Korea.

The dish often incorporates such modern ingredients as instant noodles

 and sliced American cheese. Other ingredients may include ground beef, sliced sausages,

baked beans, minari, onions, green onions, tteok,tofu, chili peppers,

macaroni, garlic, mushrooms, and other vegetables in season.

Naeng-myun, meaning "cold noodles"is a Korean noodle dish of long and thin handmade noodles

 

made from the flour and starch of various ingredients: buckwheat potatoes,

 

sweet potatoes,  naengmyun made with the starch from arrowroot

 

 (darker color and chewier than buckwheat noodles),

and kudzu. Varieties with ingredients such as seaweed and green tea are available.

 

 In South Korea it is a summer dish, rarely eaten during other seasons.

Fugu is the Japanese word for pufferfish and the dish prepared from it, normally species of genus

 

Takifugu, Lagocephalus, or Sphoeroides, or porcupinefish of the genus Diodon.

 Fugu can be lethally poisonous due to its tetrodotoxin; therefore, it must be carefully prepared to

 

 remove toxic parts and to avoid contaminating the meat.

 

The restaurant preparation of fugu is strictly controlled by law in Japan and several other countries,

 

 and only chefs who have qualified after three or more years of rigorous training are

 allowed to prepare the fish. Domestic preparation occasionally leads to accidental death.

 

Fugu is served as sashimi and chirinabe.Some consider the liver the tastiest part,

 but it is also the most poisonous, and serving this organ in restaurants was banned in Japan in 1984.

Spicy Stir-Fried Octopus

Nakji bokum is a very spicy octopus dish enjoyed by many Koreans.

 Octopus tentacles are cut into bite-sized pieces then pan stir-fried with spicy gochujang (red chilli

 

pepper paste) along with gochugaru (red chili pepper flakes), sesame oil,

red/green chili peppers, green onions, carrots and onions. Different variation of this dish does exist as

 

 the octopus can be substituted with squid for less chewy texture and taste.

 Non-Koreans may find this dish too spicy even diluted with rice that may come with this dish.

 Mixture of nakji bokum and steamed white rice is common to make nakji dupbop which is a dish

 

 known as octopus mixed rice.
