In Korean cuisine, red bean soup is called patjuk (팥죽), and is commonly eaten during the winter

 

season. On Dongjinal, a Korean traditional holiday which falls on December 22, Korean people eat

 

Donji patjuk, which contains saealsim (새알심) meaning bird egg, a ball made from glutinous rice

 

flour, named such due to its resemblance to small bird's eggs, possibly quail eggs.

 

Eating patjuk is a ritual to wish for abundant harvests.Ancient Korea was an agrarian society, and

 

 a rich harvest has always been a pivotal issue for them. Koreans eat Patjuk (red bean soup) on

 

Dongji(winter solstice). When they make Patjuk (red bean soup) they add small dumplings which

 

were made of rice as the same number as their age.

Seolleongtang is a Korean broth tang (soup) made from ox bones (mostly leg bones), brisket and

 

other cuts. Seasoning is generally done at the table according to personal taste by adding salt, ground

 

 black pepper, red pepper, minced garlic, or chopped spring onions. It is a local dish of Seoul.

 

Seolleongtang is typically simmered over a low flame over a period of several hours to an entire day,

 

to allow the flavor to be gradually extracted from the bones. It has a milky off-white, cloudy

 

appearance and is normally eaten together with rice and several side dishes;

 

the rice is sometimes added directly to the soup.

 

 

 Naengmyeon냉면 also known as raengmyeon (in North Korea), naeng-myeon, naengmyun, or

 

naeng-myun, meaning "cold noodles") is a Korean noodle dish of long and thin handmade noodles

 

 made from the flour and starch of various ingredients: buckwheat (메밀, memil), potatoes, sweet

 

 potatoes, 칡냉면, naengmyun made with the starch from arrowroot (darker color and chewier than

 

buckwheat noodles), and kudzu (칡, chik). Varieties with ingredients such as seaweed and green tea

 

are available. In Korea it is a winter dish, rarely eaten during other seasons.

Tteokbokki 떡볶이 is a popular Korean snack food made from soft rice cake,

 

fish cake and sweet redchili sauce.teokbokki was also a part of  Korean royal court cuisine in

 

the Joseon dynasty. While the modern version of tteokbokki is red and spicy, the original version was

 

 brown and plain. It was called "gungjung tteokbokki , Palace Tteokbokki. Just like the name implies,

 

 gunjeon tteokbokki was a main example of Korean haute cuisine. It was mainly composed with a

 

 combination of tteok, meat, vegetables and different kinds of seasoning. After the introduction of

 

gochujang (Korean spicy paste made of chili peppers) during the Joseon dynasty, tteokbokki became

 

 red and spicy. It is believed that the main transition from plain to spicy tteokbokki occurred during

 

 the 1950s after the independence of Korea. In modern days, most of the tteokbokki sold in street

 

vendors is red and spicy.

Tteokgalbi is a type of Korean food made from galbi, or short ribs.

It is believed to originate in Damyang-gun, Jeollanam-do or Songjeong-ri, Gwangju, South Korea.

 

[Currently, it can be found all over South Korea.

 

It is made by shaping a mixture of beef and pork into a rectangular appearance then grilled on

 

charcoal. The reason pork and beef are mixed is that beef alone is too dry,

 

 so pork is added to make it more fatty. The leftover rib bones are sometimes boiled to make broth.
